Quick Healthy Salad

Ingredients

  • 1 cup Quinoa
  • ½ cup balsamic vinegar
  • Zest of 2 limes
  • 1 raw peeled mango
  • 1 red,yellow,green bell pepper diced
  • 1/3 cup of finely chopped onion1/4 cup sliced almonds
  • 2 tbsp or finely chopped coriander

Method

  • Cook quinoa as per directions on package and keep aside
  • In bowl whisk vinegar and lemon zest
  • In large combine all the ingredients and serve immediately
